
Tomato and Basil Broth Soup

Ingredients
- 4 x scoops (tsp) dehydrated beef broth and 400ml hot water
- 2 x sweet potatoes
- 1 x white potato
- 1 x can of chopped tomatoes
- 2 tablespoons of dried basil
Method
- Turn the slow cooker on to hot.
- Peel and chop the potatoes, add to the slow cooker
- Empty can of chopped tomatoes into the slow cooker
- Make up your beef broth and stir well to avoid clumping.
- Add the beef broth
- Cook for 3 hours
- Blend using a hand blender
- Finally, stir in dried basil
Serve with sourdough bread.
