Tomato and Basil Broth Soup

Enjoy this delicious broth soup, perfect for cold Autumn and Winter evenings, where you can warm your gut and feel nourished.

Ingredients

  • 4 x scoops (tsp) dehydrated beef broth and 400ml hot water
  • 2 x sweet potatoes
  • 1 x white potato
  • 1 x can of chopped tomatoes
  • 2 tablespoons of dried basil​

Method

  1. Turn the slow cooker on to hot.
  2. Peel and chop the potatoes, add to the slow cooker
  3. Empty can of chopped tomatoes into the slow cooker
  4. Make up your beef broth and stir well to avoid clumping.
  5. Add the beef broth
  6. Cook for 3 hours
  7. Blend using a hand blender
  8. Finally, stir in dried basil

Serve with sourdough bread.
