
Pork and Vegetable Stew with added Pork Broth
Using our collagen dense pork bone broth, you can add additional protein nutrition to this meal.

Ingredients:
- 680 g pork shoulder or pork stew meat, cubed
- 30 ml vegetable oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 potatoes, peeled and diced
- 2 cloves garlic, minced
- 5 g dried thyme
- 5 g dried rosemary
- Salt and pepper to taste
- 5 scoops (tsp) dehydrated pork broth with 1 litre of hot water
- 150 g green beans, trimmed and halved
- 150 g corn kernels (fresh or frozen)
- 150 g peas (fresh or frozen)
- Chopped fresh parsley for garnish
Method
- Brown the Pork: a. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. b. Add the cubed pork and brown on all sides. Remove the pork from the pot and set aside.
- Sauté Vegetables: a. In the same pot, add chopped onions, carrots, celery, and garlic. Sauté until the vegetables are softened.
- Add Herbs and Spices: a. Stir in dried thyme, dried rosemary, salt, and pepper. Cook for an additional 1-2 minutes until fragrant.
- Make up the Broth: In a jug prepare the broth with hot water, stir well to avoid clumping
- Simmer with Broth: a. Return the browned pork to the pot. Pour in the pork broth, scraping the bottom of the pot to release any flavorful bits. b. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 1 to 1.5 hours until the pork is tender.
- Add Vegetables: a. Add diced potatoes, green beans, corn, and peas to the pot. Simmer for an additional 20-30 minutes until the vegetables are tender.
- Adjust Seasoning and Serve: a. Taste and adjust the seasoning with salt and pepper as needed. b. Ladle the stew into bowls, garnish with chopped fresh parsley, and serve hot.
